vegeta broke a sorcery that enslaved his mind and his body, what makes you think he wont put up a resistanse to this genjitsu of yours.

Assuming they start off without anyone doing a quick surprise attack and without overly large distance (aka, they start in a duel-style with a couple dozen metres in between)...
Itachi wins. As proven, he can trap people in Genjutsu by pretty much doing nothing. Even without Mangekyo this means he can have Vegeta kill himself or similar. Or just stab him as he's paralyzed.
