For me it is:
Elfen Lied - Loved It, hated it for being too short. i have to say i cried a little bit at the end.

and Freezing- alot of fan service (if you know what i mean) but one of the best stories i have seen, and well devolped characters.

then you have to see Clannad.
OMG Clannad! XD
Anyway, for kinda love and sad story, you must watch tegami bachi aka letter bee (i'm an otaku too ;) )
for Fate/Stay Night, may be you should watch Fate/Zero first
Shin Hanazumi
The Second Flower of Hanazumi Kazoku

If you are looking for a good plot, some mystery and doesn't mind a bit of crappy artwork then go watch higurashi no Naku Koro ni. It's a classic.

If you want action, gore and some yuri on the side, Ga-Rei: Zero is for you. Not as complex as higurashi in term of plot though.

If you are tired of the shounen genre but still want some action, check out Shiki. Most definitely recommended if all of those twilight movies made you lose your faith in vampire fiction

If you need something a bit more peaceful, more episodic and great originality then give Mushishi a try.

Combining boredome with this thread, I've recently watched DeathNote and Shiki and can warmly recommend both to people who enjoy something not going with the casual anime mainstream.

edit: Wouldn't mind bumping this thread, but that could be considered gravedigging.
Just finished watching 'Code Geass', can highly recommend it. It's a mix of Death Note and Gundam (and yes, that is actually possible).
